Menu Monday

I only have a few recipes for you today.  Last week I had a huge event that meant most of my meals had to be eaten on the run in 5 minutes {and bites} or less.  Here are the two homemade meals I managed to squeeze in:


Tuna and Artichoke Panini {Giada de Laurentiis}
I made this sandwich a lot when I was single, but since M isn't a big fan of artichokes or olives, I now have to wait until he's out of town or working late to enjoy it.  Last Monday was such a night.  Instead of making one big sandwich on a baguette, I keep the tuna mixture and olive spread in separate containers in the fridge and just make individual sandwiches on sourdough as needed. I love all the different flavors, it's so summery!  It tastes like something you might eat in Provence. 

Baked Pasta {M's Recipe}
 M made dinner for me on Tuesday night and it was SO good.  And possibly the easiest recipe ever:  he cooked one box of penne pasta and browned one pound of sweet Italian sausage.  He mixed the pasta and sausage together with one can of Hunt's Four Cheese pasta sauce and a teaspoon of garlic powder.  He poured it all into a baking dish, topped with shredded mozzarella, and baked it all at 350 for about 30-35 minutes.  Yum!

Yum! That tuna and artichoke panini looks delicious. Will def be trying that recipe soon!

ooh that pasta looks really good! I love the idea of adding some meat-I usually make the Barefoot Contessa 5 cheese penne but this sounds like a fun alternative.
