Menu Monday

Two soups and two repeats this week.  Not particularly exciting, but definitely satisfying.  Enjoy!

Chilled Peanut Soba Noodles {Claire Robinson}
An old stand-by.  I make this a lot on nights when M has to work late.

Another old stand-by.  Quick, easy, healthy, tasty.

Tomato, Basil, and Cheddar Soup {More Fruit Please}
This was really delicious, but maybe just a tad too tangy from the Greek yogurt.  I think it might be better if it was half sour cream or heavy cream.  I found the tang to be a little overwhelming.  Overall we enjoyed this, especially the leftovers for lunch the next day.

Spinach Tortellini Soup {Budget Bytes}
The first soup in our new Soup Sunday tradition.  Loved it!  It was SO easy and fast to make.  It was filling, but not heavy.  And I love anything involving cheese tortellini.  I'm looking forward to my leftover lunch today!

Uh, yes. Were I on death row, my last meal would have tortellini in it. Smothered in pesto sauce. And also steak.
