Menu Thursday

One of our first Soup Sunday soups! Very simple to make, makes a ton, and we both loved it.  Winner!  We topped ours with Greek yogurt, Cabot Seriously Sharp cheddar, and Tabasco Chipotle sauce.


Same deal as last year: started with a jar of Dave's Butternut Squash Pasta Sauce and went from there.  I may or may not have added a few splashes of half-and-half this time around.

Mummy Dogs are a Halloween-tradition in my family, but strangely, I had never made them for M before.  We made these together and although they weren't the most attractive mummies, there were delicious.  Served with Annie's Shells and Cheese and steamed broccoli.

I used this recipe as a starting point and then doctored up with diced kalamata olives, diced sundried tomatoes, capers, and a few splashes of red wine vinegar.  I didn't really measure, I just threw in whatever looked like a good amount to me.  Very tasty and made a lot!

This recipe is definitely becoming a favorite in our house.  The crust is just so delicious! Served with Skinnytaste's Garlic Sweet Potato Mash and steamed sugar snap peas, tossed with sesame oil and toasted sesame seeds.

All in all, good eats over the past few weeks.  Now that we're in Operation Get It Together mode, I'm hoping to get back to regular Menu Monday posting {read: regularly making homemade, healthy meals instead of ordering pizza}.

Nice work! I saw the mummy dogs on instagram and immediately asked JM if we can make them.

I guess I've been seeing lots of grands biscuits/crescent roll commercials and am CRAVING.

Yum! I love when you do your menus! I can't wait to try that pumpkin chili. I bought 6 jars of the Dave's butternut squash pasta sauce at Costco the other day. I'm obsessed with it!
