Both of these recipes had been on my to-make list for awhile. I LOVED the chicken burgers. M ate them, but I wouldn't go so far as to say that he loved them. These may become a Single Gal meal for me for those nights when M is on the road. The butter roasted carrots were a hit with both of us. I think they are my new favorite way to eat carrots.

We're big feta fans around these parts and we don't turn up our noses at tzatziki either. These burgers did not disappoint. Although it was a weensy bit difficult to get the feta completely enclosed in the meat mixture, I made it work. This one's a keeper!

This meal was a go-to of mine in my Single Gal days because it was inexpensive and it made a TON, so I had leftover lunches for the rest of the week. It's become a favorite of M's as well. Easy to make, not a lot of clean-up, and very tasty.

Meh. Liked, did not love. I normally love a good roasted red pepper sauce, but this just lacked...something. Won't be making it again.
Sorry I don't have a tenderloin recipe for you. These were leftovers, courtesy of my father-in-law. I'm pretty sure they were just marinated in Lawry's and grilled. The salad was wonderful! It reminds me a little of Arroz Congri. I added some chopped cherry tomato and red pepper to ours because I had it on hand. This would be great to whip up a batch of at the beginning of the week and have for lunches all week.
